Ingredients:
- 1 1/2 pounds shrimp (I used the kind with the shell still on, but you can use already prepared shrimp)
- 6 cups water
- 1/4 onion
- 2 bay leaves
- 2 garlic cloves
- 1 teaspoon salt
- 1 1/2 cups ketchup
- 1/2 cup orange juice (fresh or store bought- 1 large orange or 2 medium orange)
- 1 teaspoon maggi jugo sauce
- 2 chipotle peppers
- 1 1/2 cup of shrimp broth
- 4 limes
- 1 cup celery
- 1 cup cilantro
- 1 cup purple onion
- 2 tomatoes (I use red roma)
Optional to Serve
- avocado
- saltine crackers or tortilla chips
- valentina sauce (or any other sauce for flavor)
Steps
- Add the water to a medium pot and add the onion, bay leaves, salt and garlic on a medium flame
- Bring mixture to a bowl (cover the pot so it reaches to a boil quicker)
- Peel the shell and tail off all the shrimp and set aside
- Use a toothpick to remove the intestines of the shrimp on both the top and bottom of each shrimp
- Once the mixture comes to a boil, add the shrimp shell to the water.
- Cook for 5 minutes and them remove shells, onion, garlic, and leaves leaving just the broth
- Prepare a ice bath by putting water and ice in a large bowl
- Add the shrimp to the broth and cook the shrimp until they turn a pink color (takes about 2-3 minutes. Do not overcook or they will become rubbery)
- Place shrimp in ice bath immediately after cooking to stop them from further cooking
- Measure out 1 1/2 cups of shrimp broth from the pot and set aside
- Dice the celery, onions, cilantro, tomatoes, and avocado
- If you choose to use fresh orange juice, juice your oranges now
- Juice your limes
- Remove the shrimp from ice bath and place in another large bowl
- Add lime juice to shrimp and let sit while you prepare your sauce
- In a blender add the chipotle peppers, orange juice and maggi sauce. Blend until combined.
- Add the ketchup and shrimp broth you set aside earlier into your blender and your sauce is done 😀
- In a VERY large bowl add the blended mixture, celery, onions, cilantro, tomatoes, and shrimp with the lemon juice and mix until combined
- Let the mixture chill in the fridge for at least 20 minutes to allow the flavors to marinate
- Serve and enjoy (top with avocado if desired)
