Pork In Green Sauce

Ingredients

  • 5 pounds pork shoulder (ensure the meat has a layer of fat on it)
  • 1 1/2 teaspoons salt
  • 1/2 onion
  • 1 cup water
  • 3 garlic cloves
  • 1 1/2 pounds green tomatillos (approximately 12 medium sized)
  • 1/2 bunch cilantro
  • 3 jalapeno peppers
  • 3 serrano peppers
  • 1/2 teaspoon cumin

Steps

  1. Cut the pork into about 2 inch pieces
  2. Place pork into a large pot and add 1/4 onion (cut into two parts), and 2 garlic cloves, and 1 teaspoon salt into the pot
  3. Turn your stove to medium heat and cook the meat covered with the lid for 40 minutes (stir after 3-4 minutes of cooking and then periodically until the meat releases broth so that it does not stick to the bottom)
  4. Preheat a medium pan on medium heat and prepare your peppers
  5. To prepare cut the stems off then place on the pan
  6. Peel the skin off and clean the tomatillos. Place on the same pan
  7. Half the other 1/4 of the onion and place on the same pan to roast
  8. Cook until roasted on all sides (make sure to turn all ingredients periodically to ensure roasting on all sides)
  9. Once the meat has released the juices and cooked for about 40 minutes remove the lid and cook until and the liquid is evaporated and the meat becomes fried (about 30 more minutes)
  10. To make the sauce combine the tomatillos, 1/2 teaspoon salt and 1/2 cup water and blend until combined (not too much otherwise the sauce will be too liquid)
  11. Add all the peppers except for 1 serrano and 1 jalapeno pepper and 1/4 bunch cilantro into the blender
  12. Blend very shortly so that the sauce has a thicker consistency (if you don’t like that you can blend to whatever desired consistency you desire)
  13. Cut the 1 serrano, 1 jalapeno, 1/8 onion into little cubes and the slice the cilantro
  14. Once the meat is done cooking turn off the flame, remove the meat and drain out the remaining grease (you can keep it in if you’d like)
  15. Add the meat back into the pan and turn the flame onto medium again
  16. Add the diced onion and cumin and cook for 1 minute
  17. Add the blended salsa and cook for 5 minutes
  18. Lastly, add the meat and cilantro and cook for two more minutes
  19. The meat is done, enjoy :)!
