Ingredients
- 1 (16 oz) box pasta (I use penne)
- 4 italian sausages (you can use either mild or spicy)
- 3 1/2 cups chicken broth
- 2 tablespoons oil
- 1 cup spaghetti sauce (I use the tomato basil marinara from Trader Joes)
- 1/4 onion
- 1 medium carrot
- 1 stick celery
- 2 garlic cloves
- 1/2 tablespoon Italian seasoning
- 1/2 tablespoon rosemary
- 1/2 cup parmesan cheese
- Basil (optional for a garnish)
Steps
- Dice your celery, carrot (after peeling) and onion
- Cut the rosemary into small pieces
- Remove the covering off the sausages and cut into approximately 2 inch pieces
- Preheat a large pot on medium heat with the oil (takes about 1-2 minutes)
- Next add the sausages into the pot and cook until they turn a brown color (about 5 min)
- Remove your sausages from the pot onto a bowl
- In the same pot with the same oil add the carrots, celery, and rosemary and cook for 5 minutes
- Add minced garlic cloves and the cooked sausages back into the same pot and stir to combine
- Add the pasta, chicken broth, and spaghetti sauce into the pot and stir until everything is well incorporated
- Cover the pot on medium heat and let cook for 15 more minutes or until your pasta is cooked to your liking (be sure to stir about every 3 minutes while cooking to make sure the pasta does not stick to the bottom of the pot)
- Add the parmesan cheese, turn off the flame and stir to combine
- Let the pasta rest for 10 minutes
- Garnish with basil if desired and enjoy 🙂
