Ingredients
- 1 pound green tomatillos (approximately 6 medium sized)
- 1/4 onion
- 2 chipotle peppers
- 2 chilis de arbol (can put more or less depending on how spicy you like)
- 2 garlic cloves
- 1/2 teaspoon salt
- cilantro (about 6 stems)
- 3 tablespoons oil
Steps
- Cut the tomatillos into quarters
- In a medium pan on medium heat add the oil and preheat for 1-2 minutes
- Add the onion, garlic, and chilis de arbol
- Stir for 1 minute and then remove the chilis from the oil
- Add the tomatillos to the pot and cook for 5-6 minutes
- Add the cilantro, and return the chilis de arbol into the pot along with the chipotle peppers
- Cook for 3 minutes (stirring periodically)
- Add all of the ingredients to a blender along with the salt
- Blend to a desired consistency (start on low and increase the speed)
