Ingredients
- 3 Liters Water
- Salt (1/2 tablespoon for the pasta, 1 teaspoon for the carrots)
- 4 tablespoons oil
- 1/4 onion
- 1 bag of elbow pasta (can use other shapes too)
- 2 medium carrots
- 2 garlic cloves
- 1/2 cup mayonnaise
- 1/2 cup mexican sour cream (aka crema)
- 1/2 tablespoon mustard
- 1/4 teaspoon black pepper
- 14oz ham
- 8 oz mozzarella cheese
Steps
- preheat two medium saucepans. One with approx 2 liters of water and the other with 1 liter of water
- In the pot with 2 liters of water add 1/2 tablespoon of oil and 3 tablespoons of oil, garlic, onion and cover with a lid to bring to a boil. Once boiling add the pasta and cook for 8-10 minutes.
- In the pot with 1 liter of water at 1 teaspoon of salt. Peel and chop the carrots into small pieces. Once the water is boiling add the carrots and cook for 8-10 minutes
- Drain the pasta in a colander and rinse with cold water to stop them from overcooking
- Drain the carrots
- Cut the ham, and cheese into small cubes
- In a large bowl mix together the mayonnaise, crema, mustard, and pepper
- Add the macaroni, ham, cheese, and carrots in and mix until everything is combined
