Chicken Tacos

Ingredients

Chicken

  • Tortillas (this recipe makes 12 tacos)
  • 3 pounds chicken breast
  • 1/3 cup oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 lemons
  • 1/4 onion
  • 1 jalapeno
  • 5 garlic cloves
  • 1/4 bunch cilantro

Salsa

  • 1 pound tomatillos (about 6)
  • 3 chiles de arbol
  • 1 habanero pepper
  • 1 teaspoon salt

Pico de gallo

  • 2 tomatoes
  • 1/2 onion
  • 1/2 bunch cilantro
  • 1 teaspoon salt
  • 1 lime

Guacamole Salsa

  • 1 tablespoon onion
  • 1 tablespoon cilantro
  • 1 medium avocado
  • 1 tomatillo
  • 1 lime
  • 1 teaspoon salt

Steps

  1. Dice 1/4 onion, 1 jalapeno, 5 garlic cloves and 1/4 bunch of cilantro
  2. Preheat a medium saucespan
  3. Remove the seeds from the habanero pepper
  4. Add the habanero pepper, 1 pound of tomatillos, and chile de arbol to the saucepan and cook for 5 minutes. Let cool and then blend ingredients with 1 teaspoon.
  5. Make the marinade for the chicken by combining the diced onion, jalapenos, garlic, cilantro, 2 lemons, 1 teaspoon salt, and 1/2 teaspoon pepper
  6. Cut the chicken breasts in half and tenderize with a meat pounder to ensure the chicken is even thickness throughout
  7. Add the marinade to the chicken and let sit for at least 1 hour
  8. Preheat a griddle on medium heat
  9. Cook the chicken on both sides for approximately 5 minutes
  10. Optional: cook your marinade for 6-7 minutes and add to the cooked chicken
  11. Heat up your tortillas
  12. Add your toppings (pico de gallo, salsa, guacamole salsa, radish)
  13. Enjoy!
