Ingredients
Chicken
- Tortillas (this recipe makes 12 tacos)
- 3 pounds chicken breast
- 1/3 cup oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 lemons
- 1/4 onion
- 1 jalapeno
- 5 garlic cloves
- 1/4 bunch cilantro
Salsa
- 1 pound tomatillos (about 6)
- 3 chiles de arbol
- 1 habanero pepper
- 1 teaspoon salt
Pico de gallo
- 2 tomatoes
- 1/2 onion
- 1/2 bunch cilantro
- 1 teaspoon salt
- 1 lime
Guacamole Salsa
- 1 tablespoon onion
- 1 tablespoon cilantro
- 1 medium avocado
- 1 tomatillo
- 1 lime
- 1 teaspoon salt
Steps
- Dice 1/4 onion, 1 jalapeno, 5 garlic cloves and 1/4 bunch of cilantro
- Preheat a medium saucespan
- Remove the seeds from the habanero pepper
- Add the habanero pepper, 1 pound of tomatillos, and chile de arbol to the saucepan and cook for 5 minutes. Let cool and then blend ingredients with 1 teaspoon.
- Make the marinade for the chicken by combining the diced onion, jalapenos, garlic, cilantro, 2 lemons, 1 teaspoon salt, and 1/2 teaspoon pepper
- Cut the chicken breasts in half and tenderize with a meat pounder to ensure the chicken is even thickness throughout
- Add the marinade to the chicken and let sit for at least 1 hour
- Preheat a griddle on medium heat
- Cook the chicken on both sides for approximately 5 minutes
- Optional: cook your marinade for 6-7 minutes and add to the cooked chicken
- Heat up your tortillas
- Add your toppings (pico de gallo, salsa, guacamole salsa, radish)
- Enjoy!
