Chicken Parmesan Recipe

  • 2 pounds chicken breast
  • 1 cup bread crumbs
  • Parmesan cheese
  • 1 cup oil (for frying)
  • 3 eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 pound mozzarella cheese
  • 1/4 cup flour
  • 1 canned jar of tomato sauce (24 oz)
  • 2 tablespoons olive oil
  • 1/2 teaspoon italian seasoning
  • 1/4 onion
  • 2 garlic cloves

  1. Dice 1/4 onion and peel 2 garlic cloves
  2. Add 2 tablespoons of olive oil into a medium pot and preheat on medium heat
  3. Add the diced onions and cook for 2-3 minutes
  4. Add minced garlic into the pot (I use a garlic press)
  5. Lower the heat to low and stir for 1 minute
  6. Add the jar of tomato sauce and cover with a lid on medium heat until mixture comes to a boil
  7. Once boiling lower to low heat and cook for 15 minutes (be sure to sir periodically)
  8. In the meantime prep the chicken by cutting the breasts in half
  9. Then pound flat with either a hammer or food can (tip: sandwich the chicken with cling wrap to avoid cross contamination)
  10. Pour 1 cup of bread crumbs into a square baking pan
  11. In another baking pan add the eggs, 1 teaspoon of salt, 1 teaspoon of pepper and whisk together
  12. Sprinkle flour onto both sides of the chicken and spread with a brush
  13. Dip the chicken into the egg mixture using a fork. Transfer to bread crumb pan and shake until chicken is fully coated on one side. Flip the chicken and shake one more time until both sides are fully covered
  14. Repeat until all chicken is covered
  15. Preheat 1 cup of oil in a large pan on medium heat
  16. Add the chicken and fry for 1-2 minutes on each side until golden brown
  17. Cut the mozzarella into thin slices
  18. In a large rectangular baking dish add 1 layer of the cooked sauce, a layer of parmesan cheese, a layer of chicken, and a layer of mozzarella cheese on top
  19. Bake for 15 minutes and the chicken is done :D! (Optional- garnish with basil)
