Ingredients
- 2 pounds chicken breast
- 1 cup bread crumbs
- Parmesan cheese
- 1 cup oil (for frying)
- 3 eggs
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 pound mozzarella cheese
- 1/4 cup flour
- 1 canned jar of tomato sauce (24 oz)
- 2 tablespoons olive oil
- 1/2 teaspoon italian seasoning
- 1/4 onion
- 2 garlic cloves
Steps
- Dice 1/4 onion and peel 2 garlic cloves
- Add 2 tablespoons of olive oil into a medium pot and preheat on medium heat
- Add the diced onions and cook for 2-3 minutes
- Add minced garlic into the pot (I use a garlic press)
- Lower the heat to low and stir for 1 minute
- Add the jar of tomato sauce and cover with a lid on medium heat until mixture comes to a boil
- Once boiling lower to low heat and cook for 15 minutes (be sure to sir periodically)
- In the meantime prep the chicken by cutting the breasts in half
- Then pound flat with either a hammer or food can (tip: sandwich the chicken with cling wrap to avoid cross contamination)
- Pour 1 cup of bread crumbs into a square baking pan
- In another baking pan add the eggs, 1 teaspoon of salt, 1 teaspoon of pepper and whisk together
- Sprinkle flour onto both sides of the chicken and spread with a brush
- Dip the chicken into the egg mixture using a fork. Transfer to bread crumb pan and shake until chicken is fully coated on one side. Flip the chicken and shake one more time until both sides are fully covered
- Repeat until all chicken is covered
- Preheat 1 cup of oil in a large pan on medium heat
- Add the chicken and fry for 1-2 minutes on each side until golden brown
- Cut the mozzarella into thin slices
- In a large rectangular baking dish add 1 layer of the cooked sauce, a layer of parmesan cheese, a layer of chicken, and a layer of mozzarella cheese on top
- Bake for 15 minutes and the chicken is done :D! (Optional- garnish with basil)
