Cactus with Eggs and Potatoes

Ingredients

  • 4 tablespoons oil
  • 3 cups water
  • 2 pounds cactus
  • 4 eggs
  • 1 pound potatoes
  • 1/2 onion
  • salt (1/2 tablespoon to cook the cactus and 1/2 teaspoon to fry the cactus)
  • 1 teaspoon oregano
  • 2 garlic cloves
  • A couple of stems of cilantro

Steps

  1. Cut off the thorns of the cactus with a knife
  2. In a medium sized pot add the 3 cups of water and potatoes (the potatoes should be 3/4 covered with water)
  3. Place pot on medium heat and cook to bring to a boil
  4. Rinse and cut the cactus into strips
  5. Prep your ingredients by peeling the garlic, cut and peel the onion into a quarter, and then chop the cilantro
  6. Once the potatoes come to a boil add the cactus, garlic, onion and cilantro into the pot. Cook for 30 minutes
  7. Drain the cactus. Set the potatoes aside and let cool (you can discard of the garlic and onions)
  8. Dice the other 1/4 of an onion
  9. Peel the potatoes and cut into cubes
  10. Preheat another pot with 4 tablespoons of oil
  11. Scramble the eggs into a bowl
  12. Add the diced onions to the pot and cook for 1 minute.
  13. Add the cactus and cook for 5 minutes
  14. Add the potatoes, oregano, and 1/2 teaspoon salt and cook for 3 minutes
  15. Add the eggs and cook until you reach a desired consistency
  16. Enjoy!
