Ingredients
- 4 tablespoons oil
- 3 cups water
- 2 pounds cactus
- 4 eggs
- 1 pound potatoes
- 1/2 onion
- salt (1/2 tablespoon to cook the cactus and 1/2 teaspoon to fry the cactus)
- 1 teaspoon oregano
- 2 garlic cloves
- A couple of stems of cilantro
Steps
- Cut off the thorns of the cactus with a knife
- In a medium sized pot add the 3 cups of water and potatoes (the potatoes should be 3/4 covered with water)
- Place pot on medium heat and cook to bring to a boil
- Rinse and cut the cactus into strips
- Prep your ingredients by peeling the garlic, cut and peel the onion into a quarter, and then chop the cilantro
- Once the potatoes come to a boil add the cactus, garlic, onion and cilantro into the pot. Cook for 30 minutes
- Drain the cactus. Set the potatoes aside and let cool (you can discard of the garlic and onions)
- Dice the other 1/4 of an onion
- Peel the potatoes and cut into cubes
- Preheat another pot with 4 tablespoons of oil
- Scramble the eggs into a bowl
- Add the diced onions to the pot and cook for 1 minute.
- Add the cactus and cook for 5 minutes
- Add the potatoes, oregano, and 1/2 teaspoon salt and cook for 3 minutes
- Add the eggs and cook until you reach a desired consistency
- Enjoy!
