Recipe:
Ingredients:
blender
pot with a lid (make sure the lid does not have a hole on it)
medium bowl
4 pounds of boneless beef roast meat
12 guajillo chiles pods
1/2 teaspoon oregano
1/4 teaspoon cumin whole
4 whole cloves
1/4 teaspoon whole black pepper
2 bay leaves
2 garlic cloves
1 green onion
1 cup of water
1 tablespoon salt
Meat Bowl:
sliced lettuce
guacamole (You can find my guacamole recipe here: Easy Guacamole Recipe)
cilantro
cream (I use cacique creme mexicana)
Steps
- Fill a medium bowl with hot water
- Remove the seeds from the chiles by cutting off the stem, cutting a slit through the side and removing the seeds with a knife
- Place the chiles in the bowl and soak for 3 minutes
- Add the garlic, oregano, black pepper, bay leaves, cloves, cumin, the chiles from the bowl, salt and water into a blender
- Blend until well combined
- In a pot mix together the blended sauce with the beef roast until the meat is covered.
- Add the green onions to the pot whole
- Put the pot on medium heat for 3 minutes
- After 3 minutes flip the meat, lower the flame and let cook for 3 hours
- Serve and enjoy
