Recipe #1: Chicken Rice Soup
Ingredients
- Bones and Chicken from a rotisserie chicken
- 2 1/2 liter of water + 2 cups for the rice
- 1 tablespoon salt
- 1/2 onion +1/4 onion
- 1 bell pepper
- 2 celery sticks
- 3 garlic cloves
- 1 cup of rice
- 2 tablespoons oil
- 3 tomatoes
- 1 bunch of cilantro
- 1 teaspoon of cumin
Steps
- Put 2 1/2 liters of water into a large pot with the celery, garlic, seeds of the bell pepper, onion , salt and cook for 1 hour on medium heat
- In another pot cook the rice in 2 cups of water for 15 minutes. Cook on medium heat until rice comes to a boil and once it is boiling put on a low heat
- In the meantime dice the bell pepper, 1/4 onion, tomatoes and chicken
- In a small pot place on medium heat add the oil and onions and cook for 2-3 minutes
- Add the tomatoes and cook for about 5 minutes
- Add the bell peppers and cook for another 2-3 minutes. Then add the cooked rice into the mixture as well as 6 cups of the chicken broth.
- Lastly add cilantro and chicken into the completed mixture
- Cook for another 5 minutes and the soup is done
